NSTEM students participated in "Intensives Projects" for two days in lieu of regular classes.  Intensives is a project based learning opportunity for students to do a deep dive study into a project of their choice on many different topics offered by their teachers.  This opportunity helps students pursue either a personal passion or an area of new learning they may not get a chance to pursue otherwise in their regular classes.

For a food science intensive students visited the U of MN animal science department.  At the cow barn, they took samples of gut microbes for DNA analysis then visited the lab to analyze the gut microbiome at various stages of digestion.  Students learned how fermented food can improve gut health and returned to North High where they made food that will improve the micro biome of your gut.
